Peanut Butter Marshmallow Protein Pancakes

Recipe originally from (I made a few changes!)

Makes 1 serving of 5 pancakes

2 large egg whites

1/4 cup+1 TBSP unsweetened almond or cashew milk

1/2 scoop Peanut Butter Marshmallow Cellucor Protein Powder (you can sub any flavor of protein you wish!)

2 1/2 TBSP oat flour-I used Arrowhead Mills, Organic Oat Flour

1 TSP coconut flour-I used Nutiva

1 packet of truvia, stevia, real sugar (whatever your heart desires)

2-3 drops Better Stevia Liquid Sweetener (french vanilla)-you can omit this or use more sugar/truvia. I like the cakes a little sweeter sometimes.

1/2 TSP baking powder

1/4 TSP baking soda

Dash of cinnamon

Mix dry ingredients together then add wet ingredients. Mix very well until lumps disappear. Spray non-stick pan (I used my pancake maker, one of my best $6 investments) with cooking spray, add batter…you all know the pancake drill. Plate these bad boys up and add whatever toppings sound good. Mine were plain greek yogurt mixed with cinnamon and diced strawberries. I finished it off with Walden Farms Pancake Syrup.
